Today was a relaxing Sunday. I made it to church before it started raining. It looks like there won’t be any sun until next weekend, rain rain rain in the forecast this week. No bowling and no walking other than to and from church, so I decided to book a trip to Scotland. Yes, my first time flying out of the country in over 2 years. I’m going for a long weekend at the end of June. I couldn’t resist the $600 round trip airfare and since I’ve seen London in 24 hours, I figured a 3.5 day trip to putz around Scotland would be enough time. I’m staying with a friend from my Europe tour, so I really couldn’t pass on this great deal. Yay! Ms. Traveler is back! So exciting!! After booking my flight, I finished taking down balloons and decorations in the common areas which were left over from the birthday party, rearranged the living room, cleaned the floors, cooked a few different dishes and enjoyed sitting and relaxing with some homemade enchiladas. Yes, I know I’ve blogged about these homemade enchiladas before, but they are just so gosh darn good.

McCormick Enchilada Mix
Whole wheat tortillas
Sharp cheddar cheese
Oh so easy, oh so yummy with avocado, lettuce and sour cream…all that’s missing is Spanish rice but still mmm mmm good.
