I spent the afternoon at the doctors for an uncomfortable procedure which is keeping me out of the gym for a week- which totally stinks! Just when I'm well enough to get back into my routine, I'm pulled from working out. Anyway, back to the pee...why is it that the doctor asks you to pee in a cup AFTER you have already gone (which I had- just before coming in)? I had to stand by the freakin water cooler drinking water so I could do the urine sample before my procedure. I'm so glad he was late starting b/c of course I had to pee like 2 times from the time I started drinking water and the time he was ready to go. So, this leads me to pea... well, pea soup to be more exact. Knowing I wouldn't be up to standing around after my appointment, I made homemade split pea soup last night and had that for dinner while I chilled in front of the TV watching "The American" (another movie that ended and I'm like "what?!" I totally didn't get the point of that movie) and "Wall Street" (which was interesting and somewhat educational). I love that I found a split pea recipe I enjoy- you don't even notice the missing ham hock! It's super easy and I added celery this time, I think next time I might add some leeks.
1 c. split peas
2 3/4 c. water (I think last time I used veg. stock, but tasted fine w/ water)
carrots
celery
potatoes
onions
2 bay leaves
1 tsp. dried basil
simmer for an hour, take out bay leaves and I used the Magic Bullet to blend everything together. And just like that, you have yummy split pea soup which reminds me of baby food, lol... but oh so tasty!
